Summary

STr-EATS, ‘Student-Run Eats’, is the latest addition to Hotelschool The Hague (HTH) entrepreneurial food and beverage outlets. STr-EATS is a food truck that is fully run by HTH students with a reinvented ‘Robin Hood’ concept in mind. This means that we operate commercial events to fund and provide hospitality experiences with important societal impact. All under the motto #it feels good to do good! The mission of STr-EATS is literally to drive change.

Working at this mobile food service outlet HTH students gain hands-on practice and develop their transversal skills by offering hospitality experiences on location for the less fortunate sections of society. In less than a year of operation, STr-EATS students have provided thousands of innovative food and beverage experiences for elderly homes, refugee reception centres, homeless shelters, and underprivileged neighbourhoods. The aim is to show that hospitality can be a catalyst for positive change, and to let our students contribute to the United Nations SDGs:

SDG 11 | Sustainable Cities and Communities
Students organise hospitality events by offering state of the art Food and Beverage experiences for society’s vulnerable groups. Their work touches the hearts (and bellies!) of many beneficiaries they reach. These events also educate the recipients about the future of food and new types of foods.

SDG 12 | Responsible Consumption and Production
STr-EATS students make use of food surplus (i.e., otherwise wasted foods which are still perfectly fit for human consumption), design zero food waste menus and serve plant-based dishes.

Acknowledgements

The STr-EATS initiative has been realised in collaboration with the municipality of Amsterdam and HTH industry partners, such as Sligro (the catering wholesaler), Future Farm (knowledge and Innovation HUB for circular cattle farming) and the Big Green Egg (manufacturer of kamado-style ceramic charcoal barbecue cookers), who all supported our #itfeelsgoodtodogood credo. Through their funding we were able to secure 60% of the investments needed. The required 40% was funded by Hotelschool The Hague (HTH). To sustain this initiative in the long run, STr-EATS has officially been added to the HTH learning outlets as a professional food service operation run at the institution.

IMPACT STORY

Impacting lifes

“TELL me and I forget, TEACH me and I may remember, INVOLVE me and I learn” (Benjamin Franklin). INVOLVEMENT is exactly what we reach with STr-EATS.

Shortly after the war started in Ukraine, the first refugees arrived in The Netherlands. HTH Ukrainian and Russian students, with families in the countries of war reached out to STr-EATS to ask for help. They wanted to provide a hospitality experience and a warm welcome for the refugees who stayed at reception centres in Amsterdam.

Since then, STr-EATS has expanded this initiative to 15 times at four reception centres. Students have not only cooked over 5000 meals for 3500 Ukrainian refugees, but also organised several social events for the Ukrainian refugee children. This way, STr-EATS motto, #itfeelsgoodtodogood, truly came to life. It made a long-lasting impression on both the beneficiaries (Ukrainian refugees) and the organisers (STr-EATS students). The students were happy to offer a helping hand and experienced organising these ‘outside our hospitality students bubbles’ events as life changing experiences. The students further shared that the news on media channels suddenly came really close to their hearts and that the refugees were people just like them. It could not get any more real-life than this.

LEARNINGS

Lessons learned

The educational playground of STr-EATS facilities student-centred learning environment where students are encouraged to take an active role in the design of their own learning journey and personal development. HTH students are challenged to discover their innovative, social and creative sides by coming up with new food concepts and menus, and hosting events where their skills are put into practice. The menus developed by our students are based on leftover food that is still safe and perfectly fit for human consumption. This food truck offers HTH students the opportunity to gain real-life operational experience: from learning how to manage a team to running their own food service outlet and preparing food for large groups.

STr-EATS promotes student ownership of real-life learning. We observe that students get intrinsically motivated to look at every detail of their (human) resources and planning. They display a professional attitude to work with real clients and deliver professional service. By operating STr-EATS students increase their social awareness and contribution to solutions to the pressing issues formulated under the UN Sustainable Development Goals.
Teaching staff take on the role of coaches by providing guidance and support while giving the ownership of learning to students. Students are truly (and literally) in the driving seat of STr-EATS.

The concept of STr-EATS deploys 21st century ways of working, and has been geared towards developing transversal competences essential for future-proofing the workplace such as collaborative problem solving, creativity, initiative and independent thinking, intercultural awareness and expression.

FUTURE PLANS

What's coming?

By investing in STr-EATS together with our industry partners Hotelschool The Hague (HTH) aims to deliver social return on investment for the period of at least 5 years. To sustain this initiative in the future, HTH ensures the continuity of STr-EATS through challenging assignments to be solved while running this food service operation. Also, we seek to continue funding by committing to execute several corporate events per year. To ensure a good flow and alternation of charity versus commercial events STr-EATS students receive an assignment: 'Start an initiative, linked to SDGs 11 and 12 where hospitality can be the catalyst for change’. The students work out a plan of action during their period of STr-EATS operation.

STr-EATS expands relationship management with diverse stakeholders. Recently, the social character of STr-EATS has drawn the attention of the ‘MDT on Tour’ programme aimed at bringing young people from different backgrounds together and offering them the opportunity to develop and volunteer (i.e MDT in Dutch: Maatschappelijke Diensttijd). This programme, run by the Dutch Ministry of Education, Culture and Science, opens doors to new worlds and experiences for young people between the ages of 12 and 30 under social service time. The MDT network connects more than 60.000 young people and 5.000 organisations as members. STr-EATS was invited to help with the activation of participants. After the first successful event, the MTD asked STr-EATS to execute a minimum of 15 future events to reach out to larger target groups and stakeholders.
